Chocolate Mousse



Chocolate Mousse has always been my favourite desserts. Unfortunately, it is quite pricey and sometimes it contains non-vege emulsifiers or alcoholics ingredients. So I decided to make them by myself (^^)

Preparation: 30 minutes

Ingredients:
300mL thickened cream
3 eggs
55g castor sugar
250gm milk chocolate bar
250 gm dark chocolate bar

Decoration:
Milk chocolate bar
Slices of kiwi fruits

Preparation:
1. Using double boil technique, melt milk and dark chocolate bar together. Once all melted, set aside.
2. Beat castor sugar and eggs until the mixture is pale, thick and double the volume. This may take 5 to 10 minutes.
3. In a separate bowl, whip thickened cream. Be careful not to over-beat.
4. Mix chocolate together with eggs & sugar.
5. Carefully fold whipped cream into the mixture. Try making sure that the texture is as light as possible.
6. Refrigerate for at least an hour before serving :) *I keep the mousse overnight in the fridge*.

Decorations:
Just before serving, scraps milk chocolate bar and cut kiwi fruits into slices. You can use your creativity to decorate your chocolate mousse. I prefer kiwi than strawberries :)


Chocolate Ganache



I never try making chocolate ganache in my life. Anyway, I am surprised that preparing chocolate ganache is so easy, even for novice bakers.

Preparation: 15 minutes

Ingredients: 
200gm 70% dark cooking chocolate
200mL thickened cream

Preparation: 
1. Using the double boil technique, melt the dark chocolate. Make sure you constantly stir the chocolate bars and avoid from over heating the chocolate.
2. Once all melt, remove the chocolate from the stove. Pour thickened cream into the melted chocolate. 
3. Stir them lightly just enough to mix them together. 
4. Let it cool to reach the desired consistency. Then, spread over the cake.
