Chocolate Mousse



Chocolate Mousse has always been my favourite desserts. Unfortunately, it is quite pricey and sometimes it contains non-vege emulsifiers or alcoholics ingredients. So I decided to make them by myself (^^)

Preparation: 30 minutes

Ingredients:
300mL thickened cream
3 eggs
55g castor sugar
250gm milk chocolate bar
250 gm dark chocolate bar

Decoration:
Milk chocolate bar
Slices of kiwi fruits

Preparation:
1. Using double boil technique, melt milk and dark chocolate bar together. Once all melted, set aside.
2. Beat castor sugar and eggs until the mixture is pale, thick and double the volume. This may take 5 to 10 minutes.
3. In a separate bowl, whip thickened cream. Be careful not to over-beat.
4. Mix chocolate together with eggs & sugar.
5. Carefully fold whipped cream into the mixture. Try making sure that the texture is as light as possible.
6. Refrigerate for at least an hour before serving :) *I keep the mousse overnight in the fridge*.

Decorations:
Just before serving, scraps milk chocolate bar and cut kiwi fruits into slices. You can use your creativity to decorate your chocolate mousse. I prefer kiwi than strawberries :)


Chocolate Ganache



I never try making chocolate ganache in my life. Anyway, I am surprised that preparing chocolate ganache is so easy, even for novice bakers.

Preparation: 15 minutes

Ingredients: 
200gm 70% dark cooking chocolate
200mL thickened cream

Preparation: 
1. Using the double boil technique, melt the dark chocolate. Make sure you constantly stir the chocolate bars and avoid from over heating the chocolate.
2. Once all melt, remove the chocolate from the stove. Pour thickened cream into the melted chocolate. 
3. Stir them lightly just enough to mix them together. 
4. Let it cool to reach the desired consistency. Then, spread over the cake.

Moist Chocolate Cake with White Chocolate & Berries Topping


Hi there, I wanna share a recipe to make moist chocolate cake. Trust me, it is so easy to make a delicious one. Have a try :)

Moist Chocolate Cake

Ingredients:
2 eggs
1 cup of castor sugar
1 cup of vegetable oil
1.5 cup of plain flour
1 cup of cocoa powder
1 teaspoon of baking soda
1 teaspoon of soda bicarbonate
1 cup of hot water
1 cup of condensed milk

Decorations:
A 250gm of white baking chocolate
Frozen Mixed berries
Milk baking chocolate

Methods:
1. Beat eggs and castor sugar until both of them are fully mixed.
2. In a different bowl, sift plain flour, baking soda, soda bicarbonate and cocoa powder. Mix them together.
3. Put a cup of water in the microwave, heat for a minute.
4. Add mixture (2) and hot water into the eggs & sugar. Mix the gradually.
5. Bake at 160 degree celcius for 30 minutes.
6. For decorations, once your cake is baked, cool it down. Make white chocolate sauce using the double boil technique. Scrap milk chocolate bars and put mixed berries on top of the white chocolate topping.

Ready to serve :)
